Good one! “If you close your eyes and hold your nose … the food will almost seem real.”

Again, good synchrony … I just finished reading an excellent review of Michael Pollan’s new book, ‘Cooked: A Natural History of Transformation, What the four elements have to do with corporate exploitation and the story arc of culinary craft.’ He looks at how cooking food altered the course of human evolution and how we’ve lost our connection to the raw stuff of nature and the elemental processes by which we transform it into food: physics, chemistry, biology, microbiology. We’ve lost our social and cultural ties to preparing and cooking food and become dangerously dependent and vulnerable for exploitation by profit-driven corporations. Industrial mfrs don’t ‘cook’ food, they ‘process’ cheap unrecognizable ingredients* into edible foodlike substances. Food is now an abstraction based on images on packaging. Pollan sees a reconnection to cooking as an antidote to the disconnects of modern life [and I’m sure he recommends organic and non-gmo!]. www .brainpickings.org/index.php/2013/04/24/michael-pollan-cooked/
